How it started

During my culinary journey, particularly while studying and working in Paris, I had the opportunity to travel through Europe. One of my most memorable experiences was in Florence, Italy, immersing in the vibrant street food culture where I tasted something simple yet so profound, a sandwich that was more than just a meal; it was a connection to the people, the place, and its heritage.

"Panino" ! or "Panini" as we call it.

There’s something uniquely satisfying about the simplicity and heartiness of a Panini, a street food that encapsulates the soul of Italy. They were everywhere; accessible, versatile, and deeply satisfying.

The taste

While we take inspiration from the Italian roots of panini, our approach reflects the diverse palates here. It’s not about rigid authenticity but about making something enjoyable and relatable to everyone. It’s not “localizing” in the traditional sense, it’s about bridging cultures through food, bringing something foreign to this neighborhood, this community, and adapting it to create new experiences while honoring its origin.

Why The Bricks

The Bricks, a café rooted in neighborhood spirit, embodies the same values that panini represent—a food meant to connect people. Panini are simple yet versatile, a street food in Italy that brings people together, whether locals or tourists. They’re not fancy like the dishes prepared in my private dining, but they’re accessible, familiar, and welcoming, a “sandwich” that everyone can relate to.

Perhaps it’s a bit symbolic, too. A panini’s rectangular shape mirrors a brick, just like the name of the café. It’s a small detail, but one that makes this collaboration feel even more serendipitous.

At "The Bricks," the panini concept fits perfectly with their focus on community. A bridge to bring people together, making it a part of daily life, just as it is in Italy.
